How thick are these towels, really?

650 GSM.

For comparison: standard towels are 400-500 GSM, hotel towels 600-700 GSM. You'll feel the difference immediately.

Do they stay soft after washing?

With proper care, yes. Wash at 30°C, no fabric softener. Organic cotton retains its softness better than conventional cotton.
